In general, carbon dioxide and other volatile gases account for 2% of the weight of the whole bean after roasting. One-way valves are different from ordinary air valves. If an ordinary valve is used while the gas inside the bag is discharged, it also allows air from outside the band to flow into the bag, breaking the seal of the bag and allowing the coffee to continue to oxidize.
